This 11" enamel skillet is great for cooking on gas, electric, ceramic and induction cooktops, as well as in the oven. Not recommended for use on outdoor grills or over open outdoor flames. Not for use in microwaves. The use of vegetable oil or cooking spray is recommended for better cooking and clean up. Select low to medium heat when cooking on stovetop, and never heat an empty pan. Use of wooden or silicon utensils is recommended. Lodge Color Porcelain Enamel on Cast Iron cookware is cast from molten iron in individual sand molds. The porcelain surface eliminates the need to season cast iron. The cast iron vessel has superior heat distribution and retention, evenly heating bottom sidewalls. The excellent heat retention reduces the amount of energy needed for cooking. Two layers of very hard, glossy porcelain enamel are chip resistant and easy to clean. The black cooking surface on the skillet is matte porcelain, not exposed cast iron. Hygienic porcelain enamel is non-reactive with food. Although dishwasher safe, hand washing with warm soapy water is recommended to preserve the cookware's original appearance. 11" diameter, 1 3/4" deep. Cafe

Cooking with a basic cast iron skillet is wonderful. Fun to have the pretty blue enamel, and you can't beat the functionality of cast iron for cooking everything from soup to nuts! Yes, I've toasted pumpkin seeds but haven't made soup in it - yet!

I made this purchase because I love cooking with cast-iron and need one with the enanel coating on the outside because I recently purchased a glass top stove. However like some of the other viewer's I agree about the inside coating. I thought the inside was just going to be the regular cast iron. I didn't realize that it had a coating on it. It works pretty good and things don't stick to much so overall I am pleased. But would rather it just be left with no coating or the enamel coating like the dutch oven has.

So I got this skillet a few months ago and was a bit dissapointed with the fact that everything I cooked in it will stick like crazy even when adding oil or butter. Eggs were a mess and pancakes I can't even start saying; so I decided to use it for deep frying and see if it was good at least for that! Well after I fried some "empanadas" and discarded the canola oil that I used I saw that the skillet had developed that "patina" they talk about and that I was wanting so bad; so I just cleaned it with a stiff brush and water; no soap, as recommended. Well, next day I used the skillet to make pancakes and eggs and I achieved the results that I was expecting when I first bought this pan. The surface is now completely non-stick and I have made pancakes and eggs several times after that, I always add a bit of butter and let heat just a bit. I always clean it with a brush and no soap, dry with paper towel and put away until next time. Most of my enameled cast iron is Le Creuset which I love but you don't need to spend that much for the skillet, this Lodge will perfom the same if not better. Oh and by the way I did my research and there is no lead or harmful chemicals in this line even though it is made in China. I'm now going to order the grill pan and panini press from this same line. This skillet is incredible. Perfect steaks and chops, bacon and corn bread. Goes from stove top to oven and cleans easily. You won't be sorry you purchased this item.

This is a great pan and can be nonstick if you read and follow the instructions that come with it. First of all, don't use high heat. Cast iron retains heat, so it cooks very efficiently on a low or medium heat. And, foods don't stick if you keep the heat low. I only gave it four stars, because I don't really like the sides of the pan. The sides are a little too steep for me. I have a Le Creuset in the same size and I use it much more. It has sides that are slightly sloping and make it easier to turn items and slide them out. But, the Lodge pan is from an American company and it is much less costly. I think the quality is very similar to the Le Creuset.
